Potluck Party Pepper Salad

One of my writing classes wanted to have a party on the last day of the semester, and I was delighted to make the arrangements. It was a low-stress potluck, and students brought things if they could. We had awesome foods, including homemade mac-n-cheese made by Josh!

I brought Potluck Party Pepper Salad, which I saw on a Facebook post. Being vegetarian and tending toward overweight, I always seek healthy options. Not only is it healthy, but it was a huge hit, and students asked me to provide the recipe. Here it is: Enjoy!

  • 3 Bell Peppers (red, orange, yellow), chopped
  • 1 medium Red Onion, chopped
  • 1 can Black Beans, drained and rinsed
  • 1 large Avocado, chopped
  • 1 large Tomato (I used 2 Roma), chopped
  • 1/2 cup Feta Cheese


  • 1/4 cup Olive Oil
  • 1/4 cup Vinegar
  • 1 tablespoon water
  • 1 tsp. garlic
  • 1 tsp. sugar
  • 1/2 tsp. onion powder
  • 1 tsp. oregano
  • dash black pepper
  • 1/8 tsp. thyme
  • 1/8 tsp. basil
  • 1 tsp. parsley

Combine veggies in large bowl with beans. Combine dressing ingredients and pour over veggies; marinate as long as you choose in fridge. Top with Feta and avocado before serving. Yum.
